The idea
“Würdest du …?” plus an infinitive is the standard polite request among people on du terms; with Sie it becomes “Würden Sie …?”. Während is a genitive preposition in standard German: während meiner Reise, während des Urlaubs. Location after neben uses the dative: “neben der Balkontür”. “Sich nach etwas richten” means to follow or go by something, with nach plus dative: nach deinen Notizen.
Other ways to say it
“Könntest du nächste Woche nach meinen Pflanzen schauen?” – Friendly and slightly broader: checking, not only watering.
“Hätten Sie Zeit, während meines Urlaubs meine Blumen zu gießen?” – Formal Sie-version for a neighbour you do not know well.

“Würdest du während meine Reise meine Pflanzen gießen?” → “Würdest du während meiner Reise meine Pflanzen gießen?”: Während requires the genitive in standard German. For a feminine noun like Reise, the possessive meine becomes meiner.
