The idea
After diese, die or meine in the plural, adjectives end in -en: diese kleinen Narzissen, die gelben Tulpen. “Passen zu” plus dative; dazu replaces zu plus a thing. “Bleiben bei” plus dative means to stick with: “bei diesem Umfang bleiben”. Ausverkauft means sold out. Flower vocabulary: der Strauß (bouquet), der Stiel (stem), das Grün (greenery).
Other ways to say it
“Was hätten Sie in einer ähnlichen Farbe?” – Polite Konjunktiv II; leaves the choice to the florist.
“Ich möchte einen Strauß für etwa zwanzig Euro.” – Gives a budget and lets the florist compose.

Watch out
“Diese kleine Narzissen haben eine ähnliche Farbe.” → “Diese kleinen Narzissen haben eine ähnliche Farbe.”: After a plural determiner like diese, the adjective takes the weak plural ending -en in every case.
