The idea
Hinzukommen (to be added) is separable, and the verb agrees with the plural subject zwei Personen: kommen. Zu + dative marks what something is added to: zu unserer Reservierung. Wären is Konjunktiv II, used for a planned or hypothetical number. Eingetragen sein means to be entered in a list. Beibehalten (to keep) is separable.

Watch out
“Zu unserer Reservierung kommt zwei Personen hinzu.” → “Zu unserer Reservierung kommen zwei Personen hinzu.”: The subject zwei Personen stands after the verb but is still plural, so the verb must be kommen. When something else opens the sentence, learners often lose track of agreement.
