You will choose between büyük and yüksek by asking whether you mean size or age, or height and level.

The idea

büyük talks about size, age and importance: büyük şehir, büyük kardeş (older sibling), büyük sorun. yüksek talks about height or level: yüksek bina, yüksek fiyat, yüksek ses (loud), yüksek ateş. A table can be büyük without being yüksek.

Watch out

For a person's height Turkish uses uzun, not yüksek: Babam çok uzun. yüksek suits things that rise, and büyük would suggest that he is old or bulky.
