Turn a dish you know into instructions someone else can follow. This workshop uses an original cucumber-and-yogurt salad as a model; the focus is how to organise the recipe, not how to form every imperative.

The idea

Give the dish a title. Under Malzemeler (ingredients), put each ingredient with its amount on a separate line. Under Hazırlanışı (preparation), number the steps in the order the reader should carry them out. Use önce (first), sonra (then) and son olarak (finally) where they help. This model keeps the siz instruction style: yıkayın, doğrayın, karıştırın. State a duration when it matters, and finish with serving. Keep number words separate, as in on dakika.

Watch out

A grammatical instruction can still leave the cook guessing: Zeytinyağı ekleyin says what to add, but not how much. If the list gives 2 yemek kaşığı zeytinyağı, the step can refer back to that amount. Check that every ingredient used in the steps appears in the list, with a quantity; do not introduce a new ingredient halfway through.

Try it yourself

  1. Complete the ingredient amount: iki ___ zeytinyağı. Choose yemek kaşığı or dakika.

    Show answer or example answer

    yemek kaşığı

yemek kaşığı: the gap needs a measure for the olive oil. İki yemek kaşığı gives two tablespoons; dakika measures time and cannot supply an ingredient amount.

  2. Mark the first step, before chopping: ___ salatalığı yıkayın. Sonra doğrayın. Choose Önce or Son olarak.

    Show answer or example answer

    Önce

Önce: washing is the first action in this two-step sequence. Son olarak would mark it as the final action even though chopping follows.

  3. Fill the blank with a ten-minute duration: Salatayı ___ buzdolabında bekletin. Write words or digits.

    Show answer or example answer

    on dakika / 10 dakika

on dakika / 10 dakika: both specify how long the salad stays in the fridge. Saat onda would mean at ten o’clock and would not tell the reader how long to wait.

  4. Keep the same form of address: Yıkayın, doğrayın, ___. Choose karıştır or karıştırın.

    Show answer or example answer

    karıştırın

karıştırın: the first two verbs address the reader as siz, so this form continues that voice. Karıştır is a valid instruction to sen, but it changes the form of address here.

Use it today

Write a recipe with a title, four ingredient entries and four numbered steps. Give every ingredient an amount, use at least two sequence markers, include a duration and end with serving. Keep the form of address consistent. Ask a partner to match each ingredient to the step where it is used.
